Authentic Dalma Recipe: Traditional Odia Dal With Vegetables

Dalma is one of the most comforting dishes from Odisha. It is made with lentils, seasonal vegetables, raw papaya, and a few simple spices. Unlike many rich curries, traditional dalma does not need a long list of ingredients or a heavy gravy. The vegetables and dal cook together, which gives the dish a naturally creamy texture and a mild, earthy flavour.

In many Odia homes, dalma is served with steamed rice, pakhala, or simple roti. It is filling enough for lunch but light enough for an everyday meal. This version is easy to prepare in a pressure cooker and works well when you want a wholesome dish without spending too much time in the kitchen.

Dalma is my personal favorite I just love eating Dalma with veg thali adding red chili powder which is hand made adds special taste to it.

Ingredients

For the dalma, you will need:

  • 1 cup toor dal or split pigeon peas.

  • 1 cup raw papaya, peeled and cubed.

  • 1 medium potato, cut into small pieces.

  • 1 small tomato, chopped.

  • 1 carrot, sliced.

  • 1 cup pumpkin or ash gourd, cut into cubes.

  • 1 small eggplant, chopped.

  • 2 green chillies, slit lengthwise.

  • 1 teaspoon turmeric powder.

  • Salt according to taste.

  • 4 cups water.

For the tempering:

  • 1 tablespoon ghee or mustard oil.

  • 1 teaspoon cumin seeds.

  • 1 dry red chilli.

  • 1 bay leaf.

  • 1 small piece of cinnamon.

  • 2 garlic cloves, lightly crushed.

  • 1 tablespoon grated coconut, optional.

  • Fresh coriander leaves for serving.

You can adjust the vegetables according to what is available. Raw papaya, pumpkin, potato, and eggplant are commonly used, but beans, ridge gourd, or plantain can also be added.

How to Make Dalma

Rinse the toor dal(you can add moong dal also) two or three times until the water looks reasonably clear. Soaking the dal for 15 to 20 minutes is optional, but it can help it cook faster.


How to make dalma in odia

Place the washed dal, chopped vegetables, tomato, green chillies, turmeric, salt, and water in a pressure cooker. Stir gently so the turmeric and salt spread evenly. Do not fill the cooker beyond its safe limit because the dal can foam while cooking.

Close the lid and cook over medium heat for about three to four whistles. Allow the pressure to release naturally. Open the cooker and check whether the dal and vegetables are soft. If the mixture looks too thick, add a little hot water and bring it to a gentle boil.

Avoid stirring too aggressively. The vegetables should remain partly visible instead of turning completely into a paste. Lightly mash only a small portion of the dal to create a thick texture while keeping the dish rustic.

Now prepare the tempering. Heat ghee or mustard oil in a small pan. Add the cumin seeds, dry red chilli, bay leaf, and cinnamon. When the cumin begins to crackle, add the crushed garlic. Fry for a few seconds until the garlic becomes lightly golden.

Pour the tempering over the cooked dal and vegetables. Add grated coconut if you enjoy a slightly nutty flavour. Finish with chopped coriander leaves and serve hot.

Tips for Better Flavour

The quality of dalma depends largely on the vegetables. Use fresh seasonal vegetables instead of adding too many ingredients at once. Pumpkin gives a gentle sweetness, while raw papaya adds body and texture.

If you prefer a more traditional flavour, use mustard oil for the tempering. Ghee gives a softer and richer aroma. You can also roast cumin seeds and dry red chilli, grind them coarsely, and sprinkle the mixture over the finished dalma.

Do not add garam masala. Dalma is usually appreciated for its simple flavour, and too many strong spices can hide the taste of the vegetables.

What to Serve With Dalma

Serve dalma with hot steamed rice and a small spoonful of ghee. It also goes well with rice, papad, fried vegetables, or a simple salad. For an authentic Odia-style meal, serve it with fried or roasted vegetables and a little pickle.

Leftover dalma can be stored in the refrigerator for up to two days. It usually becomes thicker after cooling, so add a few tablespoons of water while reheating. Heat it thoroughly and adjust the salt before serving.

Can I make dalma without raw papaya?

Yes. You can replace raw papaya with ash gourd, bottle gourd, pumpkin, or plantain. The flavour will change slightly, but the recipe will still be delicious.

Can I use moong dal instead of toor dal?
